HOW TO PREPARE JOLLOF RICE




 Most people find it hard to believe that Jollof rice  is an African dish. I guess it is because of its simplicity and its continental appearance after preparation. In most people's mind set, Africans are not known for preparing simple dishes. If you are one of those people, I am happy to tell you that we can be simple.
 Jollof rice, also called 'Benachin' meaning one pot in the Wolof language, is a popular dish in many parts of West Africa. It is thought to have originated amongst members of the Wolof ethnic group in the Senegambia region  but has since spread to the whole of West Africa, especially Nigeria, Ghana, Sierra Leone, Liberia and Togo.
 There are many variations of Jollof rice. The most common basic ingredients are rice, tomatoes and tomato paste, onion, salt, and red pepper. Beyond that, nearly any kind of meat, fish, vegetable, or spice can be added.


Ingredients:

1/3 cup pure vegetable oil *
2 large onion (sliced)
1 small can tomato paste
1 cubes magi
½ teaspoon each (curry,  ginger, garlic, chilli powder)
1teaspoon salt *to taste
4 bay leaves (optional)
2.5 cup rice
Carrot (optinal)
blended tomatoes (5)
Pepper (3)
Chicken



PREPARATION:

  1. Prepare the tomato stew. If you will use whole chicken then wash and cut it into pieces. Cook with the seasoning and 1/2 of  1 bulb of onion (chopped). Let it fry till  it  gets a golden look which is more presentable especially if you have guests for dinner. I prefer parboil rice because it makes cooking easier. Wash the parboiled rice and put in a sieve to drain.Pour the chicken stock and the tomato stew into a sizeable pot and leave to boil.
  2. Add the drained parboiled rice, salt and pepper to taste. The water should be the same level of the rice. This is to ensure that all the water dries up by the time the rice is cooked.
  3. Cover the pot and leave to cook on low to medium heat. This way the rice does not burn before the water dries up.
  4. If you parboiled the rice, the rice should be done by the time the water is dry. Taste to confirm. If not, you will need to add more water and reduce the heat to prevent burning. Keep cooking till done.It can also be served with fried plantain and salad. This is a suitable dish for bachelors, social gatherings and family gatherings.
